For Castillo de Mendoza winery the fruit quality is essential to guarantee final result of the elaboration.

So, before going into the deposits, all the grapes arriving at the winery will go through a manual selection table where those fruits which do not meet the demanded quality requirements will be removed. Only the best will go to the next processing step: desteeming.

To desteem the harvest the winery has at disposal a desteemming machine with rubber rods and perforated rotating drum. The transfer of the desteemmed grapes to the different tanks is carried out through conveyor belts which avoid unwanted skin and pip breakages.

The elaboration plant, of 500 m2, receives a battery of trunk-conical design tanks equipped with the most modern automated refrigeration and cap immersion (punching down) systems. The deposits hold 5000hl.

These deposits count on the latest technology for cap immersion. It is a system designed by the property and arranged in such a way that the treatment given to the harvest is that of great gentleness, allowing the bouquet extraction and skin color avoiding unwanted pip breakages.

Moreover, the winery also has at disposal French oak wooden barrels assigned to the elaboration of higher quality wines.

Wine ageing requires settling, calmness, light and controlled temperatures. Castillo de Mendoza wines rest in a spacious 1600 m2 cellar dug in bare rock. Our winery counts on 1000 barrels of 2 years average age, 50 % of which are American oak and the other 50% French.

The underground wine cellar is equipped with an automatic ventilation system. The temperature and humidity levels are controlled at all times.

Thanks to its spaciousness the barrels the barrels layout in one floor/level is possible. This is a big advantage when it comes to aging processes and it favors individual analytic and tasting controls.

The bottling and finished product room in Castillo de Mendoza winery has an area of 700 m2 which shelters the bottles. After settling for the necessary time for tuning up, all the current wines range (Chirimendo, Vitarán, Momilde, Noralba, Castillo de Mendoza y Evento) will be ready for consumption.
